The Gardens feature a vibrant array of flowers and of vegetables that are incorporated into our hotels and dining experiences. Our harvests are also available for purchase at The Farmstead and through our CSA program. The 1661 Resort is deeply committed to sustainability and believes that small, mindful practices can make a significant impact on the environment. One of the key ways we reduce our environmental footprint is by diverting over 95% of our food waste from landfills through composting, which includes everything from kitchen prep scraps to leftovers from guests' plates. Composting is not just about waste reduction; it’s about creating a closed-loop system that nourishes our gardens and enriches our local ecosystem, turning food scraps into nutrient-rich compost that supports our thriving farm. Our sustainable farming techniques include a range of best practices that enhance our efforts and contribute to long-term ecological health and a more resilient landscape. Together as a community, we strive to make sustainable choices that contribute to a well-balanced Block Island.

CSA PROGRAM

The 1661 Resort’s Community Supported Agriculture (CSA) program allows the local community to experience the freshest, locally grown produce by purchasing weekly or seasonal shares directly from our farm. This initiative not only supports sustainable farming practices but also strengthens our connection with the local community, allowing us to share the bounty of our garden with those who value organic, sustainable food.

COMPOSTING & COMPOST TEA

We compost over 95% of our food waste, creating nutrient-rich soil that supports our farm, gardens, and local ecosystem while reducing greenhouse gas emissions. This compost is also used to produce compost tea, a natural fertilizer that boosts soil fertility and plant health, ensuring sustainable growth without chemical treatments.

APPLE GUILDS

By planting apple trees alongside a variety of complementary plants, we create apple guilds that support biodiversity and increase yields. The careful selection of plants that enhance the growth of apple trees ensures a healthier environment, while also providing a habitat for beneficial insects and wildlife, creating a thriving, self-sustaining orchard.

FOOD FOREST

Our food forest is a permaculture-inspired garden designed to mimic a natural ecosystem. By layering different types of plants, including fruits, vegetables, herbs, and nitrogen-fixing plants, we create a resilient and biodiverse environment that supports sustainable food production. This practice reduces the need for synthetic fertilizers and pesticides, while promoting long-term soil health and reducing our environmental footprint.

COMPANION PLANTING

Companion planting is an organic gardening technique we use to promote plant health and maximize yields. By planting compatible species together, we can naturally repel pests, encourage beneficial insect populations, and improve soil health. This practice minimizes the need for chemical interventions and creates a balanced, harmonious growing environment.

NO-TILL GARDENING

Our no-till gardening method minimizes soil disruption, reducing erosion and preserving the integrity of the soil’s ecosystem. By avoiding tilling, we maintain the natural structure of the soil, improve water retention, and increase biodiversity, all of which contribute to healthier plants and sustainable farming practices.

NO SYNTHETIC FERTILIZERS

In our commitment to sustainability, we never use synthetic fertilizers, herbicides, or pesticides. Instead, we rely on organic practices such as composting, crop rotation, and natural pest control methods to maintain healthy, thriving gardens. This ensures that our food is grown in the most natural and environmentally-friendly way possible, with no harmful chemicals affecting the land or local wildlife.

FARM FRESH EGGS

Our onsite hens provide fresh, farm-to-table eggs, ensuring guests enjoy eggs laid right here on the property. These eggs are a vital part of our sustainability efforts; helping reduce food waste by allowing the chickens to eat compost and leftover scraps. As free-range birds, they roam at will; promoting a healthier and happier life while foraging for insects and other highly nutritious food sources.

Guests can explore the Food Forest Guild at The 1661 Farm & Gardens—an abundant edible landscape rooted in regenerative practices. This living orchard weaves together fruit trees, berry shrubs, stone fruits, blueberries, pomegranates, and more, creating a multi-layered ecosystem that nourishes both our guests and the land itself. Designed to flourish year after year, the guild strengthens soil health, invites pollinators, and restores the natural balance of our coastal environment. What begins as a delicious experience for visitors ultimately becomes an investment in the long-term vitality and beauty of Block Island. To make your morning sparkle, we include a complimentary glass of champagne—a perfect vacation toast! Served daily from Memorial Day to October 1st (8:00–10:00 am), guests receive a reduced rate of $15 per adult and $8 per child under 10. The public is welcome at $40 per adult and $20 per child. From October 1st to Memorial Day, guests can enjoy a complimentary light Continental Breakfast. Start your day with charm and flavor!
